Easing into the New Year
Dearest Friends,
I’m going to suggest easing into this New Year – it’s a word that feels the most comforting without a lot of expectation. I’d like to toss aside all those resolutions and expose feelings more genuinely, shedding a layer of skin in the process and working on igniting your spirit with fresh, healthy vibes.
It may not be easy, but really, what is? It may require an awakening to truths we’ve kept under control all this time, sometimes we need a real ugly cry to release all the circumstances of our feelings, quite honestly, that is when the healing and growth begins.
In the midst of this transformation, look into the vastness of the sky, bathe in the starlight and breathe in their life force, vow to recognize your place and acknowledge all the wisdom you’ve gathered and validate, that you, just being your unabandoned self, is enough. And then dream, dream dangerously and outrageously. We owe ourselves this moment, we’ve been courageous in a multitude of uncertainties. And as always, love, love, love, because more than ever, it is the antidote for survival.

Gua Sha FACIALS
What is a Gua Sha Facial exactly? THE ANTI-CLEANSE: A RECIPE FOR JANUARY 2021
We’re all for cleansing. Celery juice is a constant in our routine. Feeling bloated and tired? Spend a day eating veggies and fruits and it will perk you right up. But let's all agree, this January in 2021 is for feeding the soul. Nourishing the heart. Comforting with clean foods, warmth, love, cooking from scratch. We always turn to Alice Waters when we want to create something delicious and clean.
1 bone-in, skin-on chicken breast
1 quart chicken stock
1 small onion, diced
1 carrot, diced
1 stalk celery, diced
1 small parsnip, diced
1 sprig parsley
1/4 pound fettuccine noodles broken up into pieces
Chopped fresh dill, for finishing
In a large pot, combine the stock and breast. Bring to a boil, skimming off any foam, then lower to a simmer. Add half of the onion, carrot, celery, and parsnip, plus sprig of parsley, and simmer for 30 minutes.
After 30 minutes, remove the chicken carefully to a plate to cool and strain the broth to remove the cooked vegetables. Return the broth to the pot and taste for salt. Start a second pot of boiling water to cook the noodles. When the chicken is cool, separate the meat from the skin and bones and shred it. Place in a small bowl and ladle some hot broth over it to keep it moist.
Add the remaining onion, carrot, celery, and parsnip to the broth. Simmer for an additional 15 minutes, until soft. In the meantime, cook the noodles in boiling salted water until tender. Add the cooked noodles, chicken and its broth, and taste for seasoning. Ladle the soup into bowls and top with the fresh dill.
